Vegetarian Cheesy Pasta
Hi,
Today I thought I would share my cheesy pasta recipe, it is delicious and easy to make.
Ingredients: (Generally makes 3 portions)
2 Onions
2 Peppers
1/2 tsp Dijon Mustard
1 1/2 tbsp Butter
1 1/2 tbsp Plain Flour
1/4 tsp of Paprika
250ml Milk
Pasta
Cheese
Garlic
Oil
Vegetarian Bacon
Tinned Sweetcorn
Apart from the main ingredients in the sauce, the mustard, milk and butter and the peppers and onions, the rest I estimate based upon how many people are eating and also the flavouring I want. For example, I add lots of garlic because me and my mum love garlic, but you might not want as much. This is why I love this recipe so much, because it is very adaptable.
1) Heat the oil in a frying pan on a low heat. Cut the peppers and onions. When the oil is hot, add the peppers and onions and cook them slowly.
2) Heat water in a saucepan till boiling and then add the pasta. Cook to the packet's instructions.
3) In another saucepan make the sauce. Add the garlic, mustard, paprika and butter. Stir occasionally till the butter is melted.
4) Add in the flour till a paste is created.
5) Slowly whisk in the milk, whisking out the lumps. The sauce should slowly thicken.
6) When the sauce has thickened add the cheese and stir till melted.
7) Add the Vegetarian bacon to the frying pan. (I use the Vivera Veggie Bacon Pieces and they are delicious, they only take 5 mins to fry. This is why I add them to the frying pan at the very end. If you use a different vegetarian bacon check the packet's instructions and cook accordingly because they may vary.)
8) In a casserole dish, put the sweetcorn and then add when ready the sauce, pasta and the mixture from the frying pan.
9) Bake in the oven for about 20 - 40 mins at 160C, or till you are happy it is baked.
10) You can pair it with garlic bread if you want. Me and My Mum recently tried this new Red Onion and Cheddar flatbread from Sainsburys. It was so good and a perfect addition.
