Vegetarian Cashew Pasta Bake
Hi,
Today I thought I share this delicious Cashew Pasta Bake. It is one of my mum's favourite. It is yummy and quite easy to make. I have adapted a Marconi Salad recipe in Vegan on Go by Jerome Eckmeier and Daniela Lais.
Ingredients:
2 Sweet Potatoes
2 Carrots
2 Onions
750 ml Vegetable Stock
2 Garlic Cloves
60g Cashew Nuts
1 tsp Dijon Mustard
1 tsp Sweet Smoked Paprika
3 tbsp Butter
Pasta
250g Quorn Mince
1 tin of Sweetcorn
Oxo Cubes
1) Peel the Sweet Potato, Carrot and Onions. Cut them in small cubes and boil in the vegetable stock until tender.
2) Boil water for the Pasta. Add the Pasta and cook to the packet's instructions.
3) Drain the vegetables and save 500 ml of the vegetable stock. In a food processor puree the garlic, sweet potatoes, onions, carrots, cashews, mustard, paprika, the reserved vegetable stock and butter until smooth.
4) In a large casserole dish pour in the sauce, pasta, quorn mince and sweetcorn, stir until combined and then put it in the oven.
5) Cook for 20-30 mins in the oven at about 180 C.
