Vegetarian Fajita Style Pasta Recipe

Today I thought share this really delicious fajita style pasta, I have adapted a BBC Good Food Fajita Style Recipe to make it vegetarian. It is a Ferguson Family favourite.
Ingredients (for 4 people)
Pasta
2 Red Onions
2 Peppers
Olive Oil
This Isn't Chicken Plant Based Salt and Pepper
Garlic
1/4 tsp Chili Powder
1 heaped tsp of Sweet Smoked Paprika
1/2 tsp Oregano
1tsp Ground Coriander
1/2 tsp Cumin
3tbsp tomato puree
80 ml double cream
50ml Water (reserved from your pasta water)
Method
1) Heat Olive Oil in a pan on a low heat. Meanwhile cut up the peppers and onions and add to the pan when the oil is hot. Slowly caramelized the peppers and onions for about 15 mins.
2) Add water to a saucepan and bring it to the boil for pasta. Add the pasta when ready and cook to the package's instructions.
3) I personally Cut up the `This Isn't Chicken' Chicken because it will go further in your dish, but that is just an extra step. Add it to the peppers and onions with some garlic. (I add the garlic here because we use frozen garlic and I have found that it can burn if it is left too long) Cook this for about 7 mins. (still on a low heat)
4) After about 7 Mins add the chili powder, cumin, coriander, paprika and oregano. Stir in thoroughly and then add in the tomato puree and stir again.
5) Then add the double cream and stir thoroughly. (on a low heat so it doesn't stick or burn)
6) When the pasta is cooked to package's instructioans drain the pasta and reserved 50 ml of water.
7) Pour the water into the other saucepan and stir, add more water if necessary to loosen the mixture.
8) Add the pasta and stir thoroughly and then cook for about 10 mins. (you can leave it on the hob keeping warm, until you are ready to serve. we have kept it on the hob for about 1 hour on a very low heat, stirring occasionally to make sure that everything is not sticking and the dinner was delicious)
9) Serve with garlic bread if you wish. Our favourite is Sainsbury's Taste the Difference Red Onion and Cheddar Flatbread
