What I eat in a week

 Hi, 

Today I thought I would share what I eat in a week. I have been vegetarian for nearly 4 years now, to read more about my decision to become a vegetarian please click hereI have also written a blog post on my top tips for becoming a vegetarian please click here.  I struggle sometimes to find ideas for dinner or lunches so I hope this blog post can help give you some ideas.

Monday 3rd May (Bank Holiday)-  

Breakfast/ Lunch- Special K

Dinner- Fajitas. My Mum made this and they are delicious, a perfect bank holiday treat. 



Tuesday 4th May

Breakfast- Special K 

Lunch- Fried Egg on gluten free toast with chia seeds and cheese spread.

            Smoothie




Dinner- Butternut Squash cheese sauce with vegetarian bacon & spinach. I made this after being inspired by Ambitious Kitchen's Pumpkin Bacon and Spinach Pasta recipe. 



Wednesday 5th May 

Breakfast- Special K 

Lunch- Fried Egg on Gluten free toady with chia seeds and cheese spreads. 



Dinner- Special K, sometimes a bowl of cereal is what you need for dinner. 😊

Thursday 6th May 

Breakfast- Special K 

Lunch- Bacon, Avocado & Chia Seeds on gluten free toast & Smoothie



Dinner-Fajita Mince and Cheese. Leftovers from Monday :) 



Friday 7th May

Breakfast/Lunch- Special K 

Dinner- Bacon & Avocado & Chia Seeds on gluten free toast



Saturday 8th May 

Breakfast- Special K 

Lunch- Vegetarian  Bacon & Avocado & Chia Seeds on gluten free toast and a fried egg



Dinner- Sweet Potato Mash, Veg and Quorn Roarsome Dinosaur Vegan Pieces



Sunday 9th May 

Breakfast- Special K

Lunch- Smoothie & Vegetarian Bacon and Avocado on gluten free toast and chia seeds. 



Dinner- Special K
